Quentin LeChat
The Royal Monceau

Quentin LeChat chose to change careers in 2011 from a law degree to Patisserie.  He joined the Center of Excellence for the Culinary Professions before working at the Chalet des Îles in the 16th, with Mr. Filipe Da Assunçao (Meilleur Ouvrier de France cuisine) then joined the Royal Hotel in Evian-les-Bains. The pastry Chef quickly took on Chef position at the Hôtel de la Trémoille in 2015 followed by the Novotel Paris Les Halles in 2017.  In February 2021, he joined Le Royal Monceau and reunited with Mr. Filipe Da Assunçao, The Hotel’s Executive Chef. Distinguished by the Grand Prix de la Pâtisserie de Paris in 2019, Quentin Lechat is also renowned for his unique version of custard.
